From our house near Raleigh, NC to the timeshare resort my husband likes next to Disney World is essentially a 12-hr drive with at least one meal stop. I do all the driving. We went to relax on resort for a week after my ski season was over and before the summer crowds arrived. We played a little golf, chilled in the lazy river, and skipped theme parks this time. 1600 miles round trip, including day trips. Coming back on Mother's Day meant less traffic.
Discovered a new seafood independently owned/operated restaurant on the way south. Tubb's refurbished an old gas station, then added a second building. The bar is inside the RV, which is an addition to that building. I thoroughly enjoyed the she crab soup.

Turns out there is a Lake Placid near Sebring, FL that has a direct connection to the Lake Placid Club in NY. Lake Placid, FL is known for its murals. Not random artwork, but paintings inspired by the local history. There is a local group that pays attention to them. New murals are still being created and old ones are maintained as needed.
The town of Sebring is being revived in recent years. The Sebring Circle is worth a visit if in the area. Several good restaurants, plus an ice cream and soda shop.
