That's what was done to us on 11th Mountain. I know my grandparents side of that like the back of my hand. It was an incredible playground.

11th has some nice options, also up Diamond Brook. I actually think with a little persistence you could ski to the top of the cliffs on Diamond.
 
Garnet Hill in North River offers both back country ski lesson and rentals, sometimes a giuded tour can be arranged. The Siamese Ponds Wilderness has about 85 miles of trail half of it skiable, Botheration Pond loop is a beginner / intermediate trail about 7and 1/2 miles, Old Farm Clearing is a 3 mile out and back starting at the parking lot at the end of Old Farm road.

If you aren't thinking skins and yoyo'ing, and more fishscale touring through the woods this is excellent advice. The Siamese and Vanderwhacker WF have tons of options, and I'm guessing not too far from your place.
