Alternatives to Skiing

I was a pizza cook for about six weeks when I was in AK. The place had a sign outside that said “The Best Pizza in Alaska.” It may have been but it wasn’t good. The place was opened by an Italian family but when I worked there it had been taken over by Aramark. They had the family’s recipes posted up on the walls and followed them but most of their pizzas were being cooked in a Pizza Hut style oven with a conveyer belt. I realized almost immediately that the trays they were using on the conveyor were just too small for the recipe. So the dough was moist and there was way too much sauce, cheese & toppings. Ugh. I couldn’t do anything about the pies that went through the conveyor but the slicers were cooked in a conventional brick oven so for those I just spread the dough thinner to make a 15-20% bigger pie and went light on the toppings. It wasn’t Broadway Joe’s quality but it was way better then their normal fare. I was the only real New Yorker working there. Nobody else knew what pizza was supposed to be I guess.

That's the issue right there. The best pizza around here was from a store owned by a retired NYPD cop. After he sold out, the new owners seemed to follow the same recipes, but cooking is as much about adjusting for the variation in the ingredients as it is about following recipes. The new guy couldn't get it right because he didn't know what it was supposed to be. He went out of business pretty quickly.

I agree on too much cheese. It can be gross if they over do it.

when I first moved to flag there was an awesome joint owned by a New Yorker. He sold it off and it went to shit real quick. I was bummed, when I found that place shortly after moving here I was ecstatic. I’ve lived in a bunch of different mountain west states and there hasn’t been anything close to NY pizza.
 
The biggest mistake most pizza places do is to kill their pizza by using too much cheese. First, its gross and second, it overpowers the entire pizza. Not good.
In the kitchen I always use the KISS method and less is more.

When you go to Taos, try the pizza at Pizzano's. It's close to the intersection between US64 and RT150 that goes up the mountain. My friend who is from the southern Adirondacks considered it good NY style pizza the first time she went a few years ago. I enjoyed what I had a couple years ago. We ended up there because on Super Bowl Sunday most of the restaurants around Taos are closed for the day.
