That's the issue right there. The best pizza around here was from a store owned by a retired NYPD cop. After he sold out, the new owners seemed to follow the same recipes, but cooking is as much about adjusting for the variation in the ingredients as it is about following recipes. The new guy couldn't get it right because he didn't know what it was supposed to be. He went out of business pretty quickly.Nobody else knew what pizza was supposed to be I guess.
Photos can be misguiding or maybe the pizza in the pic is different but when I had it it was really good.That might work

When you go to Taos, try the pizza at Pizzano's. It's close to the intersection between US64 and RT150 that goes up the mountain. My friend who is from the southern Adirondacks considered it good NY style pizza the first time she went a few years ago. I enjoyed what I had a couple years ago. We ended up there because on Super Bowl Sunday most of the restaurants around Taos are closed for the day.I’ve lived in a bunch of different mountain west states and there hasn’t been anything close to NY pizza.
