Backstraps and hind quarters head to the freezer (steaks, cube steaks, roasts), our cuber is awesome. You talk about tender! The rest we make into hot sausage and summer sausage. Then we take down aprox 80lbs of burger meat to Stepniak Beef where they'll make our hotdogs, bacon, and bologna.You making any sausages or jerky or is it all going in the freezer right away?
