Backstraps and hind quarters head to the freezer (steaks, cube steaks, roasts), our cuber is awesome. You talk about tender! The rest we make into hot sausage and summer sausage. Then we take down aprox 80lbs of burger meat to Stepniak Beef where they'll make our hotdogs, bacon, and bologna.

One really nice thing about our crew is everyone gets the same amount of meat, doesn't matter if you kill one or not you still get your share.
