My opinion is if you're skiing midweek it's because you are avoiding crowds, at least for me. I will only ski a mountain where I have to pony up cash midweek for that reason. What I'm paying for is the ability to ski without skiing a crowded resort. Worth it for me even if every lift isn't running.
Greek midweek you have whatever is open basically to yourself, and yes very common for resorts not to be fully open. I'll take that any day over skiing a fully open crowded resort. Not much fun waiting at top of run for an opening all day long. Top to bottom skiing is what you're paying for midweek without interruptions. Worth it to me
