Stoves: What do you like?

Speaking of ugh, didja hear the one about those in charge in good ol'NYS are now telling us what kind of heat we have to have in our houses?

I have solar electric. I don't care about converting my hot water and heat from propane to electric. The one place I refuse to compromise is my stove. Electric stoves suck. The heat is uneven. That is all.

My domestic goddess says the same thing. I really want to change our propane stove out for an electric one. Mainly because it’s not good to breathe in all of the exhaust, especially for the little one. Less of a footprint, even better. Do the new induction stoves have the same hassles as the old school electric burners?
 
Gas rules when it comes to stoves and broilers..the only place i know of that uses electric stoves commercially are cruise ships..
Electric heat is so hard to modulate. That said electric and induction bring a pot of water to the boil faster then gas.
I do like induction, very fast heat , 100% better heat control then electric and it doesn't remain hot when turned off... Only issue is you need the proper pots and pans..

Right, you can still use cast iron? What is to be avoided? I understand they have to be magnetic, so no stainless, aluminum or copper? Who makes the best?

We have induction in this house, it's weird. Probably go with gas in our new house.

Cast iron is fine
Most manufacture make induction cook wear
Since cooking is my job and gas is my preferred heat source. I’ll use any crappy pot or pan. I’m rough on them. My only must have is a heavy bottom sauce pan.
 
Induction is the best. It is the fastest to come up to temperature and it's temperature controlled so it is the easiest to cook with. It's also also the cleanest and safest. There's no carbon monoxide or chance of gas leaking in your house, it doesn't get hot if there's no pot on the stove and it's temperature controlled so it won't melt a pot even if you leave it on overmight, which could happen to anyone. IT also has the best temprature control. You can use cast iron pots but they will damage the surface if you don't put down paper first, which is a PITA.
Natural gas is better and safer than propane. Those electric resistance glass top stoves are the worst. The slowest and easily damaged, which defeats the whole purpose of the glass top.
